St Patrick’s Day Breakfast

All of my foodie dietitian friends inspired me to try something new this morning. We have two hockey tournaments this weekend so my goal was to find something that will fuel them for their first games and of course to be green for St Patrick’s day!

I added some spinach and bananas to my favourite waffle recipe and then made real whipped cream, added peanut butter for protein and blueberries for anti-oxidants and deliciousness!

Here is the recipe, enjoy!

Green waffles:

  • 3 large eggs
  • 1/4 cup vegetable oil
  • 2 cups buttermilk (I just had milk and added 2 Tbsp vinegar to make my own)
  • 3 Tbsp white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp salt
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 cups loose baby spinach
  • 1 very ripe banana

Mix eggs and banana in blender. Add all other ingredients to blender and blend until spinach is very small or completely blended in. Let sit for 5 minutes.

Pour onto a heated, greased waffle iron. Put all of your favourite fixings out. Today this included peanut butter, whipped cream and blueberries. Other times it’s just good old maple syrup, butter and strawberries.

Fuel up for whatever great activities you have today!
