Chocolate Zucchini Cake

Another recipe of the baking I did this weekend so we have a variety of snacks for our hectic hockey schedule over the next few months!

The original recipe of this is from The Best of the Best and More (Recipes from the best of bridge series). I adapted it by adding whole wheat flour and decreasing the amount of fat. In the one I made this weekend I used white chocolate chips because it’s all I had!

Here is the adapted recipe:

  • 1/4 cup butter
  • 1/4 cup vegetable oil
  • 1/4 cup applesauce, unsweetened
  • 1 cup sugar
  • 1 egg
  • 1 egg white
  • 1 tsp vanilla
  • 1/2 cup buttermilk
  • 2 1/2 cups whole wheat flour
  • 1/4 cup cocoa powder
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 2 cups grated zucchini
  • 1/4 cup chocolate chips

Cream together butter, oil, applesauce, sugar, egg, egg white, vanilla and buttermilk. Mix dry ingredients in another bowl and add to creamed mixture. Mix in zucchini and chocolate chips. Bake in a loaf pan at 325 degrees F for 45 minutes.

Serve with a glass of milk or peanut butter for a great snack!
